Almond Milk



Why do I have to waste my daily carb allowance on a glass of Almond Milk?

Did you know that the Almond Milk you buy off the shelf is full of extra ingredients that you really don’t need to drink? Salt, grains, preservatives… and so on.


If you can avoid it, why not?


As a diabetic, I’m very careful to monitor how many carbs (sugar) I have per day and I don’t like to waste my allowed quantities on non-enjoyable carbs! Why do I have to waste my daily carb allowance on a glass of Almond Milk?


That’s how I decided to make my own


I started with the recipe shared by the amazing www.wellnessmama.com (#WellnessMama @wellnessmama) and I slightly changed it to adapt it to my taste and needs.


Wellness Mama Original:


Ingredients

  • 1 cup raw almonds (equal to 140 gr)

  • 4 cups filtered water (plus more for soaking) -(more or less equal to 1 Lt water +soaking)

  • 1 pinch sea salt

  • ½ tsp vanilla extract (or ½ vanilla bean, scraped, optional)

  • sweetener (such as 2 dates, 2 TBSP maple syrup, or a few drops of stevia, optional)

& Instructions

  1. If desired, soak almonds for at least 12 hours in pure water with 1/2 tsp sea salt. The longer the almonds soak, the creamier the finished milk will be.

  2. Drain the soaking water and rinse the almonds well. Do not keep this water to re-use as it contains phytic acid and is best to discard it.

  3. In blender or Vitamix combine almonds and pure water along with vanilla, sweeteners, or any other optional ingredients.

  4. Blend 2-3 minutes until smooth and creamy. Mixture will expand some, so make sure your blender is not full before starting it.

  5. Strain mixture into a large bowl through a sprout bag, cheesecloth, or thin kitchen towel.

  6. Pour into glass jar or pitcher and store in refrigerator for up to four days.


Wonder Sugar ? Revised version:


Ingredients

  • 1 cup raw almonds or 150 grams

  • 500 ml filtered water for soaking

  • 1.5 Lt water

& Instructions

  1. Soak the Almond overnight or at least 12 hours. While soaking I leave them in the fridge

  2. Drain the soaking water and rinse the almonds well.

  3. Blend the almond with 500 Ml filtered water, till is smooth.

  4. Strain mixture into a large bowl through a sprout bag, cheesecloth, or thin kitchen towel.

  5. Pour in a bottle and add the rest of the water

Notes

1- The quality of the almonds is the key. It’s basically the only ingredient and will make the difference. As of now the best almonds I have found are the ones sold by the Organic Shop (@organicfoodsandcafeuae).

2- Wonder Sugar Version is less creamy than the original one because the almond vs water ratio is lower. I do it because fat, carbs and calorie intake is a key point of my new lifestyle. I find it delicious anyway but you can reduce the water or increase the quantity of the almonds based on your taste. I personally started with the original recipe and reduced the sugar/fat slowly, slowly until I found my favorite ratio… you could do the same ;)
